Mellow Spinach Salad
This is one of my favorite go-to salad recipes because it is quick and easy to make, and it is absolutely delicious. Side note: this is coming from someone who doesn’t typically enjoy salads, so it’s rare for me to describe one as delicious.
This salad is PACKED with nutritional benefits. Spinach is known as a “superfood,” meaning it is nutrient-dense and beneficial for your health. Some of the nutrients found in spinach include iron, potassium, calcium, magnesium, and vitamins A, C, and K. These vitamins and minerals help with skin and bone health, digestive health, and blood pressure and diabetes management. While spinach is loaded with these nutrients, it is also a very low-calorie food.

Ingredients:
- Spinach
- Sliced apple
- Dried Montgomery cherries
- Pecan pralines
- Champagne-style vinaigrette
I don’t measure out any of the ingredients – add as little or as much of each ingredient as you like.
Variations:
- add chicken for a little extra protein and substance
- bacon is also amazing in this salad (and you shouldn’t be afraid to eat it every once in awhile – remember moderation!)
- feta also pairs well with this salad!
