Believe it or not, this recipe is from the back of Trader Joe’s flaxseed meal. They were sampling these in the store one day and I’ve been making them ever since! I’ve tweaked the recipe so they’re a little healthier, and the great thing is that this recipe is incredibly easy to modify if you want a different flavor. They are a great substitute to granola/protein bars, which are EXPENSIVE! These energy bites are easy to pack for work, school, road trips – wherever! Kids love these delicious little snacks, and you have the peace of mind of knowing exactly what you’re putting into the recipe so you don’t have to worry about extra sugars and preservatives!
INGREDIENTS:
- 1 cup rolled oats
- ½ cup chocolate chips
- ½ cup ground flaxseed meal
- ½ cup creamy almond butter
- 1/3 cup honey
- 1 teaspoon vanilla extract
Combine all ingredients together in a bowl. Form into 1” balls using hands. Arrange bites on a baking sheet or plate and freeze or refrigerate until set. Makes about 25 energy bites. Enjoy!
Variations:
- you can substitute any other nut butter if you are allergic or do not like almond butter
- change out the chocolate chips for other flavors such as white chocolate, butterscotch, or coconut flakes for a little more variety
