These potatoes are the perfect accompaniment to any dinner! I especially love them with salmon, or mixed into my kitchen sink brunch bowl. Enjoy!

Ingredients

  • 1 bag small potatoes
  • 1/4 cup olive oil
  • salt
  • 1 tbsp rosemary

Directions

Fill a large pan with water to about 1/2 inch. Heat on medium-high. Place potatoes in pan so they are all partially submerged in the water if possible, and put the lid on. Let steam until fork tender, 15-20 min. Remove from stove, drain water, and place potatoes onto baking sheet.

To smash potatoes, use a small jar or bowl. TIP: I have found that a small pyrex works very well for this. Smash the potatoes to desired thickness.

In a small bowl, mix olive oil, salt (to taste) and rosemary. Baste the seasoning mix onto the potatoes. Bake on 450 degrees for 25 minutes.
